The Seminole Hard Rock Hotel & Casino near Hollywood has poached chefs from Katsuya and Morimoto for its latest dining destination: Kuro, a Japanese restaurant set to open in January.

The big (240-seat) Kuro will be helmed by executive chef Alex Becker, hired in March as the hotel-casino’s culinary director, and executive sushi chef Shuji Hiyakawa.

Becker spent nearly a decade in the Nobu empire and then as Katsuya’s corporate executive chef before joining the Seminole Hard Rock. Hiyakawa is a Morimoto protege who led several of the Iron Chef’s Philadelphia-area restaurants.

No menu is available yet, but press materials promote “contemporary, new-style creations applying classic Japanese techniques.”
